We’re the Galsters — a proud, hard-working family with deep roots in South Louisiana. Our story is woven from generations of cooks, captains, musicians, and artists. Cajun Boilers isn’t just a restaurant to us. It’s the heart of our family, and it’s our way of welcoming you to the table to share the soulful flavors of our heritage with the Hot Springs community and beyond.

Our family’s roots stretch from the coastal fisheries of South Louisiana to the lively streets of the French Quarter, to the quiet bayous where Cajun cooking was born. Every dish we serve is a little piece of that story. A way to bring you along on a journey through the flavors, traditions, and spirit that make Louisiana cuisine so special.

At the helm of Cajun Boilers today are husband and wife, Noah and Taylor Galster. Their dedication, hard work, and heart keep everything moving. 

You’ll also find Gabe and Kera (Mom and Dad) jumping in wherever they’re needed: cooking in the kitchen, greeting guests at the door, or just making sure things are done the Cajun way: with pride, generosity, and a little extra spice. 

Gabe Jr. and Laura are right alongside us too, keeping things steady behind the scenes and lending a hand wherever it’s needed.

Cajun Boilers first opened its doors in 1985, when Romaine Guillory—a native of Abbeville, Louisiana—brought his bold Cajun recipes and warm Southern hospitality to Hot Springs. At the time, it was the first Cajun restaurant in the city and only the second in the entire state of Arkansas. Romaine, who graduated from Abbeville High in 1971, had a deep love for food, family, and community, and he poured all three into the heart of the restaurant. With its laid-back atmosphere, outdoor deck on Lake Hamilton, and signature boiled and fried seafood, Cajun Boilers quickly became more than just a place to eat—it became a local institution. For nearly 40 years, Romaine could be found in the kitchen, on the patio, or greeting guests with a warm smile and a familiar voice. His passion for bringing people together through food left a lasting legacy in Hot Springs, and his spirit still lives on in every meal served. Today, Cajun Boilers stands as a proud reminder of his vision: a place where good food, good company, and Southern charm always go hand in hand.

After 13 months of renovation, Cajun Boilers has been completely transformed from head to toe. Every inch of the space was reimagined—inside and out—to reflect the heart of our 40-year legacy while embracing a fresh, updated feel. From the floors beneath your feet to the lighting overhead, nothing was left untouched. This full-circle refresh honors the past while welcoming a new era of laid-back seafood dining on Lake Hamilton.
